Three Sheaves
Based on an Alshich Hakadosh, the three sheaves represent the three portions set aside for the poor and is a reminder to the field owner that the poor man's portion is already contained in his crop. The letter ayin crests the first sheaf and refers to both the ashir and ani (rich and poor) both words that begin with ayin.
